An internationally recognized artist, Junichi Mitsubori founded his own school, called Kado Ichika-ryu, allowing him to share the culture of traditional pastry (embodied here by kado) with the rest of the world. Wagashi is the generic term for Japanese-style confectionery, which includes not only sweets but also savory snacks. Japan has many varieties of wagashi – some of them are eaten seasonally or on special occasions, and all regions of Japan have specialty wagashi confections.
Wagashi is very artistic, with designs that express the beauty of nature and the seasons, most employing floral motifs. Some of the other seasonal motifs are sansai (edible wild plants) and uguisu bird (Japanese warbler) for spring, refreshing water and fish for summer, autumn leaves and moon for fall , and snow and frost for the winter. Many wagashi candies have poetic names, as well as exaggerated, simplified, or stylized designs. For this reason, they are also pleasant to look at.
