La nouvelle cuisine allemande et autrichienne / The New German and Austrian Cuisine (book) by Eckart Witzigmann. Publisher: Robert Laffont. 391 pages in French. 1984. World Cuisine category. Slight marks on the cover and slightly bumped corners. Interior in very good condition.

In 1994, when the Gault & Millau gastronomic guide awarded Eckart Witzigmann the title of “Cook of the Century,” he joined the very select circle of the greatest contemporary chefs. This title had previously been awarded to only three other people: Paul Bocuse, Joël Robuchon, and Frédy Girardet. The world’s highest culinary distinction,  and the fact that it is bestowed on a foreign chef is a testament to the renown and high esteem in which Eckart Witzigmann is held.

Born in Austria in 1941, Eckart Witzigmann grew up in Bad Gastein. Trained in the world’s finest restaurants, his exceptional talent was championed by the biggest names in the industry. Paul Bocuse, Paul Simon, Roger Vergé, the Troisgros brothers, and especially Paul Haeberlin all recognized Witzigmann’s exceptional talent and supported his unique career.

In addition to extensive stays in France, Eckart Witzigmann gained considerable international experience working in the world’s most prestigious restaurants. Witzigmann spent thirteen years abroad before settling in Germany in 1971 and initiating a culinary revolution at the “Tantris” restaurant in Munich. Even today, the public still distinguishes between two periods: the pre-Witzigmann and post-Witzigmann eras. In 1978, Witzigmann opened his own restaurant, the legendary “Aubergine” in Munich, which has become a center of exceptional German culinary creativity. Artists, royalty, and connoisseurs from around the world flocked there in droves to discover and savor Eckart Witzigmann’s creative and culinary talent.

In 1979, “Aubergine” became Germany’s first restaurant, and Eckart Witzigmann was awarded the coveted three Michelin stars.
