Alain Senderens, (1939-2017) was a French chef, precursor of nouvelle cuisine, 3 stars in the Michelin Guide for twenty-eight years in Paris.
In 1968, Alain Senderens created the gourmet restaurant Archestrate in Paris, dedicated to nouvelle cuisine, which he managed until 1985. He earned all his stars in ten years. From 1978 to 1985, it was one of the greatest restaurants in the world: 5 white hats and 19/20 in Gault et Millau, 3 stars in the Michelin Guide.
In 1985, Alain Senderens took over Lucas Carton in Paris. He puts his famous “Apicius duck” on the menu. From 1985 to 2005: 3 stars in the Michelin Guide.
In 2005, Alain Senderens transformed Lucas Carton into a less expensive but still quality establishment, which he simply named Senderens after causing a sensation by announcing that it was abandoning its three-star status. From 2005 to 2013, he led Senderens, whose motto is Freedom, to democratically develop the practice of cooking.
