The Lameloise house is an unparalleled gourmet stopover in the heart of Burgundy, its products and its vineyards. Pierre Lameloise, a chef with a wealth of experience (Ledoyen, Lapérouse and the Savoy in London) took over the Hôtel du Commerce in Chagny in 1921 with his wife. He obtained his first Michelin star in 1925, then a second in 1931. His son, who succeeded him in the 1960s, baptized the Hôtel du Commerce “Lameloise”. From 1971, it was Jacques Lameloise, who worked for the greatest houses, who imposed his mark and his culinary sensitivity, and obtained the consecration in 1979 with a third star. Since 2009, a tandem formed by Éric Pras, Meilleur Ouvrier de France, in the kitchen and Frédéric Lamy in the dining room, has breathed new life into the house. Respecting the fundamental values of the Lameloise house, they inscribe it in its time and make it a dream place to stay, a family home, only so much better.

After a photographic introduction to the people and places of Burgundy, the book offers a journey through the heart of exceptional products and producers of pepper, blackcurrant or large gray snails, Charolles beef or Aisy cendré, a remarkable and confidential local cheese. These products, signatures of the house, serve as the basis for the 70 recipes, creations or even improvisations of the chef, whose impeccable technique is at the service of sensitive, gourmet dishes, because they are free and rooted in their terroir.
